Deliciously Green: The Hulk Muffins -Sweet, Healthy, and Kid-Approved!

One of my favorite healthy kid-approved breakfast muffins packed with spinach and sweetened with honey are Hulk Muffins. I tell the kids their muscles start to get bigger after they’ve polished off the dozen! They’re easy to make because you throw all the ingredients into a blender, pour, and bake!

My big kiddos love these, but I really started making them when my oldest was two because they are a great simple ingredient muffin to introduce to their diet. There is no oils and no added sugar! Sometimes we add blueberries on the top, or chocolate chips if we’re feeling crazy.

Tips:

1.You can also use 3/4 cup of milk instead of the applesauce and yogurt if you don’t have those items.

2. Weighing spinach felt annoying so I just use a big handful. It’ll all work out.

Instructions

  1. Preheat oven to 350 degrees
  2. Add bananas, spinach, and wet ingredients to the blender- egg, honey, vanilla, applesauce, yogurt, and melted butter. Blend for 10 seconds.
  3. Mix remaining dry ingredients in a bowl and add to blender. Blend for 10 seconds, scrape down the sides if you need to. Batter should be smooth.
  4. Pour into lined muffin tins and bake for 20 minutes. ( You can add a few blueberries on top or chocolate chips before baking.)
  5. Let cool and enjoy!
