I’ve been on a quest to help the kids get more protein for their day’s first meal. One of our favorite go-to breakfast meals is yogurt bowls. It’s so fun to make them in all sorts of ways. The possibilities are endless. One that has been a very repetitive request is homemade chocolate granola
Everything is done on the stovetop and it’s super quick. I use parchment paper in the bottom of the pan to make clean-up easy. Anything tends to be difficult to wash. It loves to stick to the pan well. Scrambled eggs are the same, and I also use this parchment paper method for those. It is a cooking hack that I use all the time!
Once you have your ingredients mixed, and your parchment paper in the pan, pour a pancake shape with the mixture. After waiting a few minutes for it to start to get a crust on one side, start to scramble it much like scrambled eggs. You’ll see it start to crisp up quickly. Keeping your parchment paper still can be tricky, but it’s worth it for an easier cleanup. Let it cool and add it to your yogurt bowl. At this point, you can add whatever toppings you want. Our favorite is frozen blueberries and a little peanut butter. You could do strawberries in the same way, or even sprinkles!

- Line pan with parchment paper and on low to medium heat pour a bit in a pancake shape.
- Crumble it with a spatula until it starts to crisp and transfer to a bowl to cool.
- Add yogurt, fruit, sprinkles or whatever other toppings you desire.
