These are perfection, guys. My kids LOVE vanilla wafers. Who doesn’t? I mean they’re everything one would want in a cookie. They are touched with vanilla with a buttery crunch; small, sweet, and delicious. I go to put them in my cart, but before I do I glance at the ingredients: seed oils, processed syrups, and that dreaded line of “bioengineered food ingredients”. Annoying. So very annoying.
I set out to make them myself. They were so good that I made them two days in a row! On the second day, I perfected the time and the amount needed to roll into a ball. When rolling them in your hands it seems like there should be more, but I promise that little half teaspoon is all you need. Once you measure a half teaspoon in your hands you can make the rest of the batch by muscle memory. Compare it to your original and it goes pretty quickly.
The recipe made about the same amount that is in the box. You have to try them!

Buttery, crisp, homemade vanilla wafer cookies

- Preheat oven to 350 degrees F
- In a medium bowl, stir together flour, baking powder, and salt. Set aside.
- In a bowl or stand mixer cream together butter, sugars, egg, and vanilla on medium speed for two minutes, scraping down the sides when needed.
- Turn the machine to low, and add the flour mixture until well incorporated. Chill batter for 15 min.
- Using 1/2 teaspoon, make little balls in rows about 2″ apart on a lined baking sheet.
- Bake for 15 min until golden brown. Let cool and enjoy!
