We eat a lot of chicken nuggets in this house. It is the one meal I know most of the kids will eat every time. Everyone has their preferences of brands or fast food places so I was nervous to try these because I can rarely please everyone at one time with a meal. I feel like I struck gold with this recipe! Everyone had a clear plate and they all had very positive things to say about it!
My five-year-old said they were “The Lord’s Chicken Nuggets”- it’s a Nacho Libre movie reference for the food being so good that you could say it belonged to God. The things he comes up with sometimes..lol. The older kids said they were better than most fast-food places (I couldn’t beat Chick-fil-A) but, they were very impressed. My younger two returned twice for more!
The best part was that using this method, it’s incredibly cheaper than a bag of nuggets from the store. The recipe calls for ground chicken which is the cheapest version of chicken from the grocery store. Maybe that doesn’t matter to you, and that’s ok, but for people in the camp of spending every dollar carefully, it is awesome! Maybe you’re more in the camp of watching what ingredients go into your child’s food. That’s awesome too! This recipe is easy to make gluten-free if you use almond flour and gluten-free breadcrumbs. I used einkhorn flour and that’s one of my favorites to use in breading. It has a nutty sweetness to its flavor and is more nutrient-dense flour. Anything works though!
The key to this recipe, I think, is the McCormick spice “Rotisserie Chicken Seasoning”. It’s excellent on chicken and I think it makes them flavorful enough to beat out a lot of nugget recipes. I picked up a 5oz bottle from Walmart for $4.68. It’s a big spice bottle, making that price worth it to me.
I’m sure this recipe would also work in an air fryer, but I don’t own one!

- Preheat oven to 400. Line two baking trays with parchment paper.
- Mix two eggs in a shallow bowl. Combine the rest of the ingredients into another shallow bowl except for the butter.
- Add a sprinkle of salt to your chicken and mix it up with your hands or spatula. Take a heaping tablespoon at a time and shape into a nugget.
- Dip nugget in the egg mixture, then the breading mixture, and set on your lined tray.
- Once all the nuggets are on the tray brush with melted butter. Bake for 10 min, flip nuggets, and brush and bake them again for 8-10 min. They should be golden brown.
Let cool 5-7 min before eating.
