Not So Spicy White Chicken Chili

We are a divided household in the chili world. Half prefer a red sauce-based chili and half prefer white chicken chili. I could live in either camp, but my oldest requests this recipe for his birthday he loves it so much! It contains, clean ingredients, and has just the right amount of spice where the little kids don’t complain about the heat.

I’m a summer-loving girl, but this recipe makes me long for cozy weather and sweaters. It makes enough for our family of 7 ( smaller portions for the five kids) but freezes really well if you want to double your recipe. There are also a bunch of ways you can jazz this up. Feel free to top it with sour cream, avocado, tortilla chips, jalapenos, Colby, cheddar cheese, or crackers!

This recipe comes together really quickly, which is great on those busy evenings. I will even get a rotisserie chicken to speed up the process. So tasty and quick is my favorite thing!

  1. Make a roux by combining butter, and flour on medium heat. Stir til bubbly.
  2. Once bubbling, slowly stir in milk and spices. Keep string until thickened. Reduce heat to low.
  3. Add broths, beans, chilis, and drained corn. Stir well and bring to a low boil. Cook for 10 min on low. Add cooked chicken.
  4. Top with your favorite ingredients!
