Yes, it is easier to crack open a jar of sauce and buy pizza dough, BUT if you spend a few extra minutes creating this recipe the flavors are unmatched. I started doing pizza this way solely because my kids always ask for pizza, and I often have these ingredients on hand. It’s an incredibly straightforward recipe. If you can plan by about an hour and a half before your mealtime, you’ll have the pleasure of serving up a delectable, freshly-made pizza that will delight the kids.

I cook these on a pizza stone, and I feel like it makes a crisper sturdier crust. Preheating the stone is key to achieving this result. My goal is to one day have my pizza oven in the backyard! Until then, this recipe is pretty close to having fresh Italian pizza.

I frequently prepare these individual pizzas for my lunch, but they are also a perfect dinner choice. I’m sure many people believe that making pizzas from scratch takes a lot of time, but I can assure you that you can whip them up in an hour and they will taste amazing!

My kids are strictly cheese pizza eaters but the more you add to these bad boys the better. Feel free to load them with toppings, but even with boring plain cheese, they are something to make.

  1. Add the yeast to the cup of warm water with a good squirt of water. Let sit 5 minutes until foamy.
  2. Meanwhile, on a parchment lined tray cut 5 tomatoes in half and lay them cut side down. Add a head of garlic. Sprinkle with Italian seasoning and drizzle with olive oil. Roast for 10 min at 400 degrees.
  3. Add you foamy mixture to your flour with the rest of the ingredients. Mix well until ball forms. Should be slightly sticky. Cover with plastic wrap and let double in size in about an hour.
  4. Work ball of dough on a floured surface for a few minutes and then divide into four equal pieces. Make balls and them roll them out stretching them to 7-8″. Let sit on your counter while you make the sauce.
  5. Take a few roaster garlic cloves out of their shell (they should squeeze easily out), tomatoes, fresh basil leaves, and 1 tsp oregano to a bowl or a pot to emulsify. After a few pulses add salt and sugar.
  6. You can now add your sauce to your rolled out dough, and top it with mozzarella and whatever toppings you would like. Bake on a pre-heated pizza stone for best results (you can also preheat a baking sheet too) for 14 min at 450 degrees.
